Tasting Notes

This is one of the "go to" names if you're wondering what all the fuss about Riberia Sacra is. Made up entirely of Mencia, an indigenous grape variety to Galicia, it is unoaked with a pure and lush palate of red fruits. A slate-like minerality balances the fresh fruit and translates the terroir driven winemaking of Pedro Rodriguez into the glass. Although entry level, this wine is an exquisite and true expression of old vine Mencia made with care and talent. Mencia's versatility with food is particularly enjoyable, but we suggest pairing this wine with a spicy dish to achieve the ultimate experience!

Producer

Pedro Rodríguez of Adega Guimaro was among the first growers bringing international attention to the remote region of Ribeira Sacra. Although his family was making wine for as long as they remember, it was only in 1991 that they started bottling it, joining the newly created DO couple of years later. They named their winery “Guimaro” (meaning “rebel” in Gallego) – as a tribute to Pedro’s grandfather. Continuing the work of his parents, Pedro has managed to bring the estate on to the next level. In early 2000 he collaborated with Raúl Perez, who helped him realise the potential of the old plots of vines located on the steep, south facing slopes composed mainly of granite, schist, and slate. With time, the best parcels were identified, yields reduced, and organic farming implemented. In his effort to transmit the essence of the place, Pedro chooses to focus on the viticulture, keeping things simple in the winery.
